4 butter leaf lettuce or Swiss chard leaves
1 Tbsp roasted red pepper hummus (I used Oasis brand since it contains the cleanest ingredients)
1 1/2 tsp sundried tomatoes, finely chopped
1/4 cup raw spinach, chopped
1 tsp guacamole
1 Tbsp microgreens (such as arugula, broccoli, beet baby greens) or sprouts (such as alfalfa)
1 Tbsp green onion, chopped
Spread 1 Tbsp hummus on the bottom 1/2 of each lettuce leaf, about 1/2 inch from the edge. Layer 1/2 tsp sundried tomatoes, 1/4 cup spinach, 1 Tbsp microgreens or spouts, and 1 Tbsp green onion on top of hummus. Add a thin layer of 1 tsp guacamole in a thin line next to hummus, then fold the wrap tightly, as you would a burrito, tucking in all of the veggies with the first roll then rolling firmly to the end. Cut in half. Or, fold in half, as you would a taco.
