Sweet Potato Crock Pot Chili

Ingredients

4 cups dry kidney beans, soaked and cooked, OR 2 15 oz cans kidney beans, drained and rinsed

2 cups dry black beans, soaked and cooked, OR 1 15 oz can black beans, drained and rinsed

2 bell peppers (any color), destemmed and deseeded, medium dice

1 yellow onion, medium dice

2 sweet potatoes, medium dice

1 28-oz can peeled tomatoes, chopped (use the tomato liquid too)

4 cups vegetable stock

2 tsp cumin powder

2 tsp garlic powder

1 tsp smoked paprika

1 ½ tsp salt

1 Tbsp chili powder

1 jalapeno, minced (optional)

For garnish: cilantro, sour cashew cream, guacamole, lime, microgreens

Directions

Kidney and black bean soaking and cooking directions (ONLY if using dried beans):


Soak dried kidney beans in cold water for 8-12 hours, ensuring to submerge them completely in water. In a separate bowl, soak dried black beans in cold water for 8-12 hours, ensuring to submerge them completely in water.


After soaking the beans, rinse them thoroughly in fresh water, and in 2 separate sauce pots, cover the kidney beans in one pot, and black beans in another sauce pot, with enough clean water to cover them by approximately 2-3 inches. Then, cover the pots and bring the water up to a boil, immediately lowering the temperature and uncovering the pot when the water starts to boil. Cook beans at a very gentle simmer. You want a pot of beans to barely be moving, so they'll cook evenly and as thoroughly as possible.


Cook the pot with the lid on, but slightly ajar, if you want a creamy pot of beans, and cook uncovered for firmer beans.


Check the beans after 45 minutes, pulling a few out and squeezing them between your fingers. After a while, they should be soft. When they've reached the desired consistency, remove from heat.


If using canned beans, omit above steps, and place all ingredients in crock pot, except garnishes, for 8 hours on low until cooked through. Enjoy!

* Use canned beans for less preparation and cooking time

* Using dried beans are typically a bigger bang for your buck, and yield more for less money
