Prep Time

15 minutes

Prep Notes

Free of: wheat/gluten, dairy, soy, corn, eggs, refined sugar

Yields

20 energy bites

Ingredients

For the bites:

6 large soft dates (if a bit on the firm side, soak in water for 15 minutes to soften, then drain and remove pit)

1 cup raw cashews

1/4 cup almond butter

1/4 cup melted coconut oil

2-3 teaspoons pumpkin spice

1/2 teaspoon sea salt

1 1/2 teaspoons vanilla extract

For coating the bites (optional)

2 tablespoons coconut flour

1 1/2 tablespoons coconut sugar

1 teaspoon pumpkin spice

Directions

Add all energy bite ingredients to a food processor and process until combined and a sticky dough has formed.

Transfer mixture to a bowl or scoop straight from the food processor using a regular tablespoon. Portion out onto a parchment lined baking sheet and roll into smooth balls using your hands.

If desired, add the coconut flour / coconut sugar / pumpkin spice into a medium bowl, and coat bites by rolling the bites around in the mixture, and return to the baking sheet.

Move to the refrigerator or freezer to firm up for about 30 minutes and then transfer to an airtight container. Store in the refrigerator for up to a week, or in the freezer for up to 2 months.
