Pumpkin Spice Energy Bites

Ingredients

For pumpkin bites:

1 cup raisins

3/4 cup dried, unsulfured and unsweetened apricots

1 1/2 cup toasted pumpkin seeds (pepitas)

2 Tbsp pumpkin puree

1/4 cup almond butter

1 tsp cinnamon

2 tsp pumpkin spice

1 tsp vanilla

For coating the bites (optional - choose 1 or multiple options):

1) 1 tsp coconut sugar + 1/4 tsp cinnamon

2) 2 Tbsp toasted and finely ground pecans

3) 2 Tbsp raw cacao powder

4) 2 Tbsp toasted and finely ground pumpkin seeds (pepitas)

Directions

Add all ingredients into a food processor, and blend until combined (should have a sticky dough consistency). 

Remove from food processer to put in medium bowl, then place in freezer for 10 minutes so that the "dough" firms up a bit - this makes it easier to work with, and form into balls.

After 10 minutes, remove from freezer, and use a small spoon to scoop out and form into balls. Roll in optional coatings, if desired. (These bites are just as good with no coating, so don't feel obligated to coat them if you need to save time!)

Place on parchment-lined plate about 1 inch apart. Enjoy!

To store: Transfer to an airtight container and store in the refrigerator or freezer for up to 2 weeks.
