Free of: wheat/gluten, dairy, eggs, soy, corn, and refined sugar
2-4 servings
1/3 cup peanut butter
2/3 cup shredded, unsweetened coconut
1 cup raw cashews
6 medjool dates, pitted (I use Anna and Sarah dates)
1/2 tsp maca powder
2 Tbsp grape (or any flavor) jam or any organic dried berries (cranberries, strawberries, blueberries, etc)
Add all ingredients to blender and combine until well blended. May have to stop the blender a few times to scrape down the sides for even blending. Put into an 8.25-inch x 12.5-inch rectangular baking dish and put into freezer for 10 minutes so it's easier to work with; cut into small squares and enjoy!
Note: Can roll into small energy balls as well. Roll these out right after ingredients are blended and serve. Cover and keep in refrigerator for up to 10 days.
