Melon and Mint Salad

Ingredients

6 cups melon cubes (2 cups watermelon, 2 cups honeydew, 2 cups cantaloupe)

¼ cup chopped fresh mint

For pickling liquid + dressing:

¼ cup honey

¼ cup white balsamic vinegar

Juice of 2 tangerines (or oranges)

Directions

In a small saucepan over med-low heat, bring honey, white balsamic vinegar and tangerine juice to a light boil. Remove from heat as soon as it starts to lightly boil and pour this pickling liquid into a small bowl. 

Add only cantaloupe cubes to the liquid to pickle for 10 minutes (alternatively, you can skip this step, and use cantaloupe without pickling it; this just gives the salad another dimension of flavor!).

Add watermelon, honeydew, cantaloupe and mint to large bowl, and gently toss with 2-3 tablespoons of pickling liquid to dress the salad. Serve and enjoy!

*Can use leftover pickling liquid for drizzling over other fruits or non-dairy ice cream for another refreshing dessert!
