Fudgy Pistachio Brownies - Raw Vegan

Free of: wheat/gluten, dairy, eggs, corn, soy, refined sugar

Ingredients

1 cup raw pistachios, divided (3/4 cup for blending, 1/4 cup for topping)

3 cups Medjool dates, pitted

¾ cup raw cacao (100% cocoa)

¼ cup water

1 Tbsp coconut oil

1 tsp vanilla 

Directions

Place ¾ cup raw pistachios in blender or coffee grinder, and blend into a fine meal or flour. Put in large mixing bowl.

Place pitted dates into blender with water, raw cacao and coconut oil, and combine until it forms a fudgy dough. You’ll need to scrape down sides a few times with a spatula while blending to ensure that the dough comes together. Add to large mixing bowl with pistachio meal.

Add vanilla to large mixing bowl, and combine all ingredients with spatula until a fudgy brownie dough is formed. This might take some extra folding by hand to get everything combined.

Chop remaining ¼ cup of pistachios and add them to the top of the brownies, pressing down with a spatula.

Spread brownie dough into an 8” x 8” baking dish and press mixture into dish.

Cut into squares and eat right away (or, form into brownie energy balls). Or, place dish into freezer to set for 10 minutes to firm up, then cut into squares and enjoy!
