I like to soak the brown rice for 2-3 hours before cooking it to soften it; it isn't required, but highly encouraged.
60 minutes (including 45 minutes rice cook time)
4-6 servings
4-5 cups cooked brown rice
2 Tbsp coconut oil, divided (1 Tbsp for zucchini, 1 Tbsp for rest of vegetables)
1 zucchini, half moon
2 cloves garlic, minced
1 tsp fresh ginger (1/2 inch piece), peeled and minced
4 carrots, peeled and small dice
4 celery stalks, chopped
1 yellow onion, small dice
1 cup broccoli florets
8.5 fl oz 100% coconut milk
1.5 Tbsp coconut aminos
1.5 Tbsp fish sauce -OR- for a plant-based option: in a small bowl, combine 1 tsp dulse flakes, 3 Tbsp water, 1/4 tsp sea salt, and 1/4 tsp coconut sugar; let sit for 5 minutes, then strain liquid mixture into another small bowl to use in lieu of fish sauce
2 Tbsp rice wine vinegar
Juice of 1/2 lime
1 tsp hot sauce (optional)
1/4 green onions, sliced (for garnish, optional)
cilantro, chopped (for garnish, optional)
sesame seeds (for garnish, optional)
salt and pepper, to taste
Cook the rice according to package directions.
In a large saute pan over medium-high heat, add 1 Tbsp coconut oil. When oil heats up (about 1 minute), add zucchini and broccoli to saute, just to slightly soften (about 2 minutes). Add salt and pepper to taste. Remove from pan, and set aside in large bowl.
To same large saute pan over medium-high heat, add 1 Tbsp coconut oil. When oil heats up, add garlic and ginger. Let heat for about 30 seconds, and take care not to burn. Add carrots, celery, onion, and salt + pepper (to taste) to pan, and saute until vegetables are slightly soft, about 3-5 minutes. Remove from pan, and set into large bowl with zucchini.
To same large saute pan, over medium-low heat, add cooked rice, coconut milk, coconut aminos, fish sauce, rice wine vinegar, lime juice, and hot sauce (add a little water to pan if rice is sticking to bottom of pan). Let simmer for 5 minutes to allow coconut milk to thicken and flavors blend together.
Remove from heat and add to large bowl with vegetables. Mix to combine and serve in individual bowls. Add garnishes to bowls and enjoy!
