Red Lentil Curry - Crock Pot

Free of: gluten/wheat, dairy, eggs, corn, soy, refined sugar

4 servings

Ingredients

2 cups dried red lentils

4 cups vegetable stock

2 russet potatoes, large dice

2 sweet potatoes, large dice

2 bell peppers (any color), medium dice 

1 cup cherry tomatoes, cut in half

1 yellow onion, half moons

1 Tbsp coconut aminos

2 Tbsp yellow curry powder

2 Tbsp garlic powder

2 Tbsp onion powder

2 tsp salt

1 1/2 coconut milk

Toppings: fresh mangos, pineapple, cilantro, basil, avocado, sour cashew cream, and/or lime





Directions

Place all ingredients but coconut milk in Crock Pot, and cook on low for 7 hours. When lentils and potatoes are cooked through, turn off heat, and stir in coconut milk. Enjoy!
