Ingredients

1 large cucumber, spiralize into noodles using a vegetable spiralizer

2 carrots, peeled and julienned

1 red pepper, deseeded and julienned

1 yellow pepper, deseeded and julienned

2 cups purple cabbage, shredded

1 Tbsp + 1 tsp rice wine vinegar

Juice of 2 limes

3 tsp sesame oil

1 Tbsp coconut aminos

2 Tbsp sesame seeds

¼ cup green onions, chopped

¼ cup cashews, crushed

¼ cup cilantro, chopped

1 tsp hot sauce (optional)

Directions

Combine all ingredients into large bowl and mix. Serve and enjoy!
