Chickpea Cookie Dough

Free of: gluten, dairy, egg, corn, soy, refined sugar

You can shell the chickpeas for an even smoother consistency, but I found that it isn't necessary. The 'cookie dough' will turn out really smooth anyways, so save yourself some time!

Ingredients

1 cup chickpeas, drained and rinsed

1/3 cup natural peanut butter (or, any nut or seed butter)

2 tablespoons raw honey

Dairy-free dark chocolate chips or dark chocolate pieces

Directions

Combine chickpeas, peanut butter, and honey in a blender or food processor. Blend until it's a smooth dough-like consistency.

Remove cookie dough mixture from blender, and place in a large bowl. Add chocolate chips, and mix well with a wooden spoon.
