Free of: wheat/gluten, dairy, corn, eggs, soy, refined sugar
10-15 energy bites
3/4 cup cashew butter
¼ cup unsweetened shredded coconut + 1 cup (separate) for rolling energy bites (rolling the bites in coconut flakes is OPTIONAL)
2 Tbsp raw honey
1 teaspoon vanilla extract
2 teaspoon cinnamon
Zest of 1 lemon, saving 1/2 tsp of zest on the side for rolling energy bites (rolling the bites is OPTIONAL so if you're not doing this, then add all zest into the bites)
Juice of ½ lemon
4 Medjool dates, pitted
1/2 cup gluten-free oats
Add ingredients to blender (except 1 cup coconut flakes and 1/2 tsp of lemon zest) to combine until everything is mixed well. May need to scrape down sides of blender with a spatula a few times while blending.
Portion out the dough into 15 balls, and roll each ball between the palms of your hands.
*Optional - In a small bowl, combine 1 cup coconut flakes and 1/2 tsp of lemon zest, and mix with hands until gently combined. Roll each energy bite one at a time in the bowl to coat with coconut and lemon zest.
Bites can be stored in an airtight container at room temperature for up to a week, or in the fridge for up to 2 weeks. Enjoy!
