Carrot Cake Energy Bites

Free of: wheat/gluten, dairy, eggs, soy, corn, refined sugar

Yields

2-4 servings

Ingredients

1 cup carrots, peeled and grated

1 cup dried apricots (preferably unsulfured - purchase unsulfered apricots here)

2 cup medjool dates, pitted (I use Anna and Sara dates)

1 cup cashews

½ cup dried, unsweetened coconut

¼ cup peanut butter, or any nut/seed butter you prefer

1 tsp pumpkin pie spice

2 tsp cinnamon

Directions

Place all ingredients in a food processor and process until well combined. Line a baking tray with parchment paper and roll into small rounds for energy bites. Chill in refrigerator for at least 10 minutes to set.
