Apricot Energy Bites

Ingredients

1 cup dried apricots (preferably unsulfured)

1 cup Medjool dates

1 cup walnuts

½ cup dried, unsweetened coconut

Directions

Place all ingredients in a food processor and process until well combined. Roll into small rounds for energy bites on parchment paper.

Store bites in refrigerator for up to 1 week or an airtight container in the freezer for up to 1 month.
